Recipe of the Month: Lemon Squares

This recipe takes a little more than an hour to complete but the result is a classic lemon square that’s perfectly tart, soft and sweet, and it can be easily done at home!

To start you’ll want to make your crust using:

  • 10 tablespoons butter at room temperature
  • 1 ¼ cups flour
  • ½ cup + 2 tablespoons powdered sugar
  • ¼ teaspoon salt

To make it you’ll want to preheat your oven to 350 degrees and have your lightly oiled pan ready. Start by mixing flour, salt and powdered sugar together in a bowl. Add your cut up butter into the mix until it’s crumbly and press it into the bottom of your pan.

After you’ve completed that you’ll want you make your filling:

  • 3 large eggs at room temperature
  • 1 cup granulated sugar
  • 3 tablespoons flour
  • 1 tablespoon lemon zest
  • ⅓ cup lemon juice (2 lemons)
  • ½ teaspoon baking powder

Mix everything with a whisker until combined. Then pour it over your cooked crust and let it sit in the oven for about 17-20 minutes. Let cool and cut into squares. Lightly dust with powdered sugar and enjoy!
